I have never had any luck with fish. I can fry it, but occasionally I crave broiled or baked fish. This sauce was quite flavorful, I figured I can’t go wrong with celery, onion and garlic.
Ingredients
- 4 white fish fillets, fresh
- 1 cup butter
- 1/3 cup celery, chopped fine
- 2 tablespoons onion, chopped fine
- 2 tablespoons garlic, crushed
- 3 tablespoons fresh parsley, chopped
- 1/4 teaspoon crushed red pepper
- Salt and pepper to taste
- Aluminum foil for wrapping
Directions
1
Preheat broiler.
2
Melt butter in saucepan.
3
Saute celery, onion and garlic until tender and onion is transparent.
4
Add parsley and crushed red pepper; simmer 10 to 15 minutes.
5
Place fish filets in foil large enough to wrap loosely, I put each filet in a separate piece of foil.
6
Brush fish with half of sauce.
7
Season with salt and pepper.
8
Close foil together leaving room for steam.
9
Broil about 4 inches from heat for 5 minutes per inch of thickness.
10
Carefully open foil packets, turn fish, brush with other half of sauce.
11
Fold up foil packets, broil for an additional 5 minutes per inch of thickness.
12
Fish is done when it flakes easily with a fork.
