In honor of my late former mother-in-law who used to make these ribs every New Years Eve. I would have never thought to boil ribs and then bake them. I added the seasoning to mine because I like a little bit of kick. These are so good; I ate almost the whole rack.
Ingredients
- 1 rack (2 pounds) baby back pork ribs
- 1 tablespoon caribbean jerk seasoning
- 16 ounces barbeque sauce

Preheat oven to 250F.

Bring a large pot of water to a boil.

Cut the rack of ribs into 3 pieces so they are able to fit into the pot.

Place the ribs in the boiling water making sure the water covers the ribs.

Boil for approximately 15 minutes or until meat starts to pull away from the bone.

Meanwhile line a shallow baking pan with foil.

Using tongs, remove boiled rib pieces from the water, shaking off any excess water.

Place the ribs on the foil line baking pan.

Sprinkle ribs evenly with the seasoning.

Top with 1/2 of the barbeque sauce.

Bake for 1 hour.

Remove from oven and spread the remaining barbeque sauce evenly over the ribs.

Return ribs to the oven for an additional 1 hour.

Allow to cool in pan for 10 minutes before separating and serving.
