Oven baked chicken is pretty boring, so I wanted to dress it up a little. I’m sure you know by now that I’m a pretty big fan of savory and sweet combined. I had just purchased a big jar of pineapple preserves and was itching to use it for something. So there you have it!
Ingredients
- 4 chicken drumsticks
- 1 tablespoon melted butter, or butter spray
- 1/4 teaspoon rosemary leaves
- 3 tablespoon pineapple preserves
- 1 teaspoon soy sauce
- 1/4 teaspoon ground ginger

Preheat oven to 350F.

Wash and pat dry chicken.

Place drumsticks in a shallow ungreased baking pan.

Brush with melted butter or spray with butter spray.

Sprinkle with rosemary.

Bake uncovered for 35 minutes

While chicken is baking, in a small bowl blend together the preserves, soy sauce and ginger.

Remove chicken from the oven, leaving the oven on.

Brush chicken with preserves mixture.

Return the chicken to the oven for an additional 10-15 minutes to set the glaze.

Make sure juices are running clear or temperature of meat is 165F before serving.
